
Guano, a small town 20 minutes outside our home in Riobamba, is home to the chola, a small biscuit-like bread with a butter and brown sugar filling. We love to buy them hot and fresh! Cholas can be found elsewhere, but the "secret recipe" belongs to those who live and work in Guano. The family who owns the shop where we like to buy them has been making these treats for over 50 years and they make 300-400 daily. A chola sells for .10 -- definitely a bargain breakfast! When Tracy's parents came to visit, her dad discovered these little gems. We sat in the beautiful park in the town square and polished off a bag (we're not telling how many!). We broke a few apart and shared with the birds. One type of bird in particular really loved these, and we nicknamed them the "rufus-breasted chola bird!" Come on down to Ecuador and share a bag with us -- our treat!
